XLT Pizza Oven Capture Hoods Logo

XLT manufacture a range of Pizza Oven Capture Hoods for each of its pizza ovens, these can be made to suit, single, double or triple stack ovens. They can easily be altered at any time if you add or remove ovens to suit each application, with new drop down shroud conversion kits. The hoods capture 100% of heat and fumes from the ovens, which is vented from the store and typically give a substantial reduction in extraction rates. Stores remain cooler and quieter using the XLT hood.

The Pizza Oven Capture Hoods can be colour coated to suit preferred needs. Optional VFD (Variable Frequency Drives) can be built into the Hood control, automatically increasing and decreasing airflow needs depending on the number of ovens in operation. Energy efficiency at it’s very best!

AVPN Approved Electric Pizza Oven

The creator of Scugnizzonapoletano®, Giuseppe Carlo Russo Krauss, has set himself the goal of protecting and enhancing the taste of true Neapolitan pizza as it was intended: a unique piece, tailor-made by the hands of skilled craftsmen and excellent pizza chefs.

The Scugnizzo is the very first oven that cooks like a woodburning oven… without using any wood! Designed and created in Naples by Giuseppe Krauss, the oven uses only high quality materials and components to produce an oven that bakes perfect Neapolitan pizza in 60 seconds time after time. The open fronted oven is designed to be a centre piece of a pizzeria. It was created not only to give the wow factor, but to be able to cope during the busiest periods in a restaurant. It is perfect for premises where the extraction of gas or wood ovens proves expensive or problematic.

The oven operates at a constant temperature of 440-460 degrees Celsius without the need for an oven door. Perfect insulation enables the oven to offer maximum performance with minimum energy.

The AVPN have been protecting True Neapolitan Pizza worldwide since 1984, and have decided that pizzerias that who have chosen the Scugnizzonapoletano can be affiliate to the Association and create true, approved Neapolitan Pizza. "In the approval of the Scugnizzonapoletano," declares Stefano Auricchio, AVPN General Manager, "we took into account the Green change that is taking place in many countries of the world. At this moment it is even more necessary to make choices in favor of ecology and environment that are coherent with the path taken by the Association in recent years."

Cooking over hot embers is one of the oldest cooking methods known. Charcoal is mostly pure carbon, made by cooking wood in a low-oxygen environment, a process that can take days and burns off volatile compounds such as water, methane, hydrogen and tar. The process leaves black lumps and powder, about 25% of the original weight. Charcoal burns steadily, hot and produces less smoke and fewer dangerous vapours. The process of making charcoal is ancient, with archaeological evidence of charcoal production going back about 30,000 years. Commercial charcoal is found in either lump, briquette or extruded forms: Lump charcoal tends to produce a more smokey flavour, because larger pieces may not be fully carbonised; Mesquite or Hickory charcoal makes little difference in flavour to your product; to get a woody flavour, you can add wood to the fire. The Charcoa charcoal grills have perfected this to suit today’s needs with a controllable, user-friendly, modern design, manufactured to the highest standards, allowing for the rigours of heavy duty use.
