The Sigma Sprizza reproduces the manual dexterity of the pizza-maker as closely as possible by imitating his unequalled delicateness. The original protected mircorolling system, rigorously patented, is the result of an idea – a machine to knead the dough in the same way as the hands of an expert would. The exceptional performance of the machine is to create cold dough with the same crust that would be obtained by a skilled pizza-maker – without any alteration. The machine is easy and practical to use and the dough balls are perfectly flattened and rounded – every time.


 

 

 

A strong and reliable cold dough press that mimics the hand movement of the pizzaiola. This machine has been in production for many years and produces a perfect dough disc up to 40cm in diameter, without any need for heat or oil. The patented system allows the machine to produce a pressed pizza with a raised edge to ensure perfect crust rise in the oven. The Sigma Sprizza 40 can produce up to 250 pieces per hour with a small footprint.
